"Measuring the quality of Grappa"
Speaking about quality has always been a favourite topic for everyone, so much as to become a cliché. And this happens basically because, if many people talk about quality, very few tend to define and measure it: as if there were almost a holy fear to do such an operation, as if it were irreverent and carrier of some kind of misfortune to try scientific models in order to give quality a face and a volume. In the wine world the question is even more extreme: it can not be explained otherwise because the producers, in a reductionist and pragmatic period as the one we live in, prefer to consult witch doctors instead of doctors, they prefer singers and poets to professionals working with scientific rules. The quality begins with the protection of the territory reflections on the sensory characteristics of brandy, since the consumer, in case of a very traditional product, combines in a single event the emotion derived from the origin and the sensory perception of grappa.
