"Characterization of Moscato Grappa obtained with different grape marc silage methods"
They have been compared the chemical and sensory characteristics of the grappa obtained from the Muscat marcs not ensilaged and others stored in sacks and in concrete silos . The distilled grappa immediately after the marcs fermentation resulted richer in volatile compounds, with a "floral" note significantly more intense of the grappa obtained from ensilaged marcs.
