The production of distillates is one of the oldest recorded bio-technological processes. In recent years there has been in the United States a rapid increase in interest for the artisanal production of distillates. This type of distillation is widely known and practiced in the French and German speaking European countries.
This guide, by Prof. Kris Arvid Berglund, aims at explaining artisanal distillation in detail, as regards production and the more technical and chemical aspects of it.
