Malting
In English it means "to germinate". It is the germination of an embryo from a cereal seed that, developping, gives rise to another small plant. During this process the cereal must be spread on a stone floor or tile, and wet with water, during the first two or three days in order to provoke the complex working of the new embryo growth; it is left to rest for ten days and then is regularly turned using wooden shovels to make it easier for germination and preventing cereal overheating. Nowadays the whole operation has been mechanized almost everywhere.
