Esters

Chemical compounds obtained from the combination of acid with alcohol. As aldeids, they have got a very important task for the forming of bouquet, in particular way in brandies and wines. Esters usually are divided into two groups: volatile fragrant esters coming from the acetic acid and the neutral acids: fixed acids, mainly malic and tartaric. In grappa they are very important because they influence enjoyable olfactory and tasting-olfactory sensations.
