Acidity
We normally recognize three kinds of acidity in alcoholic drinks: volatile, fixed and total. The latter is the amount of the two previous ones. In volatile acidity , the main acid is the acetic, because it gives the stability and the bouquet. In the fixed acidity, the most important acids are the tartaric, malic and citric. Both the origin and the aging can be approximately calculated by the acidity measuring of a brandy. In this case you can easily understand how the acidity measuring is important in a wine distillate.The measuring happens both through the chemical analysis and the spectroscopic one added to the tasting of skilled people.
